I would probably target using cheap US 2 row barley, add in some sugar, and champagne yeast to handle the higher gravity.

I have a software application that can tell you what the target alcohol % will be based on ingredients.  It is used for beer brewing, but the logic is the same, you're just getting about 20% of the output.  There are some free applications out there, but I really like BeerSmith, especially for beer brewing.  It's probably overkill for distillation.

Simple distalation is the process. Constant temperature, and then cooling off the steam to turn back into liquid.

I have friend here in town who has been making his own wine and shine for about 5 years now. He gets closer to the taste of the apple pie from Harlan every time he makes a batch but he still not matched it yet. Sure is fun sampling the batches.

start a thread on this.  I have brewed beer in the past and am getting back into it but have never distilled liquor and am interested.

It is legal to do it on your own property as long as you don't sell it right?

Bummer.

Correct, but those vary by state.  Georgia is fairly liberal as long as you do not transport it.  Georgia, unless they have changed it, is at 100 gallons of beer per person in a house as long as they are 21 or older.  They may have gone to 200 or 250.  My memory is failing me.  Good luck proving what people brew.

Im reading the message here is that the more enjoyable shine is not the pure high alcohol stuff, but the smooth well flavored blended and cut stuff is much more desirable
