Left vs Right Brisket
« on: December 28, 2015, 12:05:14 PM »
Full Discussion:  http://eggheadforum.com/discussion/1146506/left-handed-brisket

Summary of Theory:
Any one heard of this? Supposedly the brisket from the left side of the steer is more tender. Most steers rest on their left side. When a steer gets up it has to use the brisket muscles on the right side more than the left to push itself up. This extra workout on the right side makes it tougher (and not as tasty) as the brisket on the left. So how do you tell if a brisket is left-handed? Take a packer brisket and lay it fat side down with the narrow point end facing you. If the curve on the point end curves right you have a left-handed brisket.

That's crazy!! I can already picture a butcher looking at me like a crazy person. Then I'll just explain to him that this is the way I can channel the soul of the cow to learn more about it before I cook it.

I'm a "left breast guy" anyways, so this is fitting for me.

it's tough to say for sure, but I think it's because I had a girlfriend who had a bigger left boob than her right boob, so I naturally gravitate there now.  It could be that I have better vision in my right eye, I'm right handed, or something like that, but possibly as simple as keeping my drinking hand free...who knows...they all seem like logical reasons, to me.

Just get one of each, cook them the same, and do a blind taste test.  I'd bet you couldn't tell the duifference.

make sure they are from the same steer...you could possibly get the left breast from the one cow that gets up on the left side.
