I'm not sure why I suck so bad at embedding YouTube videos.... I simply click "share", click the "Embed" tab, copy the code & paste it then I get this junk... Can someone enlighten me?

The embed tab is giving you the syntax for the link if you are coding it into a page in HTML.  For Youtube, just click share and copy the URL that is shown there and paste that here and it should work fine.
