I appreciate your expert opinion coming from the food industry. It could be bad and deadly. I don't want to know what you know lol.
We eat them medium rare at home and in certain restaurants as long as they clean and grind their own meat and follow safe slaughtering guidelines it should be OK. Our butcher will grind us some while we wait. I've eaten a lot scarier things globally i promise. Of course there is always the chance someone didn't follow the rules,

I've never been to Burger 21 either. Honestly I've never eaten at the Vortex but have heard numerous times how good their burgers are.
