Post by: extremetownie on April 20, 2021, 07:19:22 PM
I got some 2" rib eyes and have no idea how to cook them. Actually i suck at grilling anything, but i really want these to be good. Any help will be greatly appreciated. I got a pellet grill .

I haven’t used a pellet grill but my suggestion would be a reverse sear. Cook them low and slow like a pork butt etc, add a small amount of smoke if you want, until they’re about 105-110 deg. Then pull them off and crank the heat up as high as you can, and sear maybe 1-2 min a side until 125-130. Rest 10 min should be 135 assuming you want medium rare. A good thermometer like a thermapen is clutch if you don’t have one.

Meant to say the low/slow part will be indirect heat, the sear obviously direct. And season with plenty of salt/pepper/garlic powder (a mixture of the three if you have it) about an hour before cooking, lets the salt penetrate the meat some.

I’d slow cook longer to a higher initial temp

That looks good. I don't have much luck with steaks over an 1" thick.
