Made an herb butter consisting of two sticks of unsalted butter, the zest of one lemon, the juice of half a lemon, fresh rosemary, thyme, oregano, parsley, one head of garlic finely chopped, salt and fresh cracked black pepper, and some olive oil. Pushed that all under the skin and rubbed the remainder on top of the skin to brown. Sprinkled on some paprika and fresh cracked black pepper. Inside the cavity I put the remainder of the herbs, more garlic, slices of the other half of lemon, and the turkey is roasting over a rack made of onion celery and carrots in a Pinot Grigio bath.

Sides that I’m making are bacon wrapped carrots and asparagus with brown sugar.

They’re especially good with brown sugar. Almost like candy when they’re done

Got a brisket smoking on the egg.  It’s 14 hours in, should be done in w more hours. 

Frying a turkey w a light salt/pepper/garlic rub and injector w Creole Butter.

Turkey frying is a PITA but my wife loves it....so, I fry the turkey.

Brisket sounds amazing today. I’m not a huge fan of turkey but unfortunately that’s all we usually have. I tried to host this year so I could smoke a butt with the turkey but no dice

Overnight brine.... spatchcocked... smoked paprika rub... took about 2.5 hours at 250-350.

The lemon zest was the key. You could taste it though the whole turkey. Really made it light and fresh tasting. The herb butter under the skin was awesome too. Kept it crazy moist and tender.

Thanksgiving meals yesterday and today and another Saturday.

Another 5 hour drive, in St Pete.   

Needed some WH ha
