my nextdoor neighbor has a smoker (wood/coal) and I have some cubed venison and some ground venison. Anyone have any methods/recipies for venison. I don't know jack about smoking venison.

Venison... did somebody say venison!? It cooks basically just as regular beef but the fat content is almost non existent so when cooking remember that. No need to filter the grease because there is none. Best recipe I have for backstraps is to wrap them in bacon, add some some soy sauce, garlic, onion and sprinkle brown sugar on top and bake in a glass pan. Melts in your mouth! But we use ground venison for everything you use beef for.

I don't eat much meat being married to a vegetarian but when I do, I prefer it to be organic and delicious....thanks Ben. @Krawler00 I'm hungry now!

Venison is top notch. Waaaay better than beef in every way. Some people say it's gamey but if you season right it's fine. Beef tastes good because of the fat but is not good meat compared to venison if you compare the two.

Best way I've had venison is dipped in flour and deep fried. That was the last time I had it which was probably 30 years ago when I lived in NC.

For the back strap like Ben said, wrap in bacon and go.
I have ground beef and use it for a lot of things. Link sausage for the grill. Patty for the stove. I have grilled a deer ham. Country fried steak is some good stuff.

We make our own sausage from the ground venison. Add some pork fat and spices, done.

you are comparing a a great cut of deer to a crappy cut of steak. Filet is the least flavorful steak you can get.

I have never had a Venison Rib Eye.

I really don't eat much beef at all if any other than a fast food burger from time to time. A lot of great recipes for venison. Roasts in the crockpot are also the shizzle.
