I agree with Clark. 
You could also do jalapeño (or regular) burgers  with ground venison.  Grilled or oven baked. I prefer ground with NO beef fat if oven cooked, but the beef fat helps it stay pattied on the grill. Cubed is also a good one. I know around here, the local deer processors sell meat. I'd start there. Since its not USDA approved its going to be hard to find it for sale. You might bump into someone at the deer processor that has a bunch. Field and stream has a recipe section for wild game on their website, might want to check it out. I usually try to keep my deep freezer stocked with a bunch. I'd eat it in place of beef if I had enough
