I hope you all have a great Thanksgiving holiday with family and friends.  We're going to make the FL/GA loop and be home for our own thanksgiving for the first time since we've been married.

So I'm thinking about a turkey on the egg.  I've read a few pages of recipes but before I go down that road, is the fried turkey a better way to go?

Give me your BGE turkey hints too.

Brine it, find a rub you like, and spatchcock it. I've done this twice now and it comes out great. Only downside is that you can't fit one of the massive steroids birds.

I don't like turkey that much myself.  We'll be going to Waffle House as usual.

I did it once on my medium bge and it ended up a little over done and burned tasting.  Could have totally been me but I think it was also that the bird was too big for the egg and it parts that hung over the platesetter got a little over cooked by the flame.

I spatchcock chickens a lot and do them as a direct cook. Same with the turkey. All the meat you eat ends up facing up (away from the flame) so that's never been an issue for me.

That's exactly what I'm thinking except direct cook? Want thinking that at all.

And it doubles the surface area I need... Medium isn't very big.  Might cook half early... Taste it, cook the other half.

Medium egg would make it a challenge I think.
